Blue Ribbon All-Star Apple Pie

                           Kern County Fair, October 3, 1990

 

Pastry for 2 crust pie

6 Granny Smith apples, pared, cored, thinly sliced

2 T lemon juice

  c. flour

t. salt

6 T sugar   

6 T brown sugar

t. cinnamon  

t. fresh-grated nutmeg

1 T butter

cinnamon-sugar mixture: 1 T sugar to 1 t cinnamon, keep in a shaker

                                

Preheat oven to 425o.  Toss apple slices with lemon juice.  Mix dry ingredients, stir into apples to coat each slice.  Place apple filling into crust lined 9 pan.  Dot with butter.  Roll out top crust.  With 1 star cookie cutter, remove about  6 stars.  Adjust top crust, seal and flute edge.  Sprinkle generously with cinnamon sugar.  Replace cut-out stars.

 

Cover loosely with aluminum foil.  Bake 30 minutes @ 425o.  Remove foil, reduce oven to 375o.  Bake 20-30 minutes, unitl nicely browned, and juices begin to bubble around the stars.  Cool on a rack.  Serve with stars cut from American cheese slices.
